Oleda’s Age-Defying Antioxidant Salad

It’s summer and that means fresh fruit and vegetables galore. Open-air markets are everywhere and farmers have a cornucopia of produce. There’s no better time to make one of my favorite summertime salads. Not only is it pretty and tasty but it’s chock-full of ingredients that are high in antioxidants –  substances that fight free-radical damage and keep us youthful and energized. Enjoy!

Yield: Serves 4

Total Time: 15 minutes

Ingredients:

•4 cups of mixed greens such as romaine lettuce, baby spinach leaves, arugula (or any of your favorite greens)

•4 celery sticks, sliced

•1 large apple, cored and sliced (sprinkle with lemon juice to avoid oxidation)

•1 large pear, cored and sliced (sprinkle with lemon juice to avoid oxidation)

•1 cup walnuts

•1 cup pine nuts

•1 ½ cups fresh raspberries

•1 ½ cups fresh blueberries

Dijon Lime & Honey Vinaigrette

4 teaspoons Dijon mustard (I like the grainy type)

8 tablespoons freshly squeezed lime juice

½ cup extra virgin olive oil

3 tablespoons honey

1 teaspoon sea salt

Directions:

Place all salad ingredients in a large bowl.

Place all vinaigrette ingredients in a jar with a tight-fitting lid. Shake well until you have a homogenous mixture.

Pour onto salad and toss gently.

Enjoy this salad on its own or with some homemade croutons.

(I just cut up crusty bread into cubes, toss with olive oil and season to taste then pop in a 400 F for 15 minutes.)
